Ingredients for the muffins:

5 eggs
165 g icing sugar
1 tbsp vanilla sugar
165 g flour
1/2 tsp cream of tartar
80g melted butter

Ingredients for the cream:

400 g mascarpone
200 g cream cheese
4 tbsp icing sugar
150 ml Spitz Barbara syrup

Mix together the eggs, icing sugar and vanilla sugar until creamy. Incorporate the melted butter, flour and cream of tartar. Fill the muffin tins with the batter. Bake at 180 °C for around 20 minutes.

Beat together the mascarpone, cream cheese, icing sugar and Barbara syrup until you get a firm, creamy texture, place in an icing bag and pipe onto the muffins using a star nozzle. Decorate with fresh strawberries.
