Ingredients for the rice pudding

400 g long-grain rice
1 vanilla pod
Zest of ½ an orange
50 g granulated sugar
1 l milk
50 g whipped cream
10 cl Spitz eggnog
20 g white chocolate

Ingredients for the marinated oranges

4 seedless oranges, peeled
1 star anise
2 cloves
½ a cinnamon stick
10 cl grenadine
½ l white wine

Eggnog Rice Pudding

with marinated spiced orange

  1. To make the rice pudding: Cook the rice with the vanilla pod, sugar, orange zest and milk until just tender, stirring constantly. Add the Spitz eggnog and whipped cream to taste. Sprinkle grated white chocolate over the rice pudding.
  2. To prepare the marinated oranges, bring the white wine, grenadine syrup and spices to the boil. Soak the whole peeled oranges in the cooled liquid for 3 days. This creates the attractive red colour on the outside of the orange slices.
