Ingredients for mixture 1: Vanilla and eggnog
1 packet custard powder
½ l milk
11 cl Spitz eggnog
2 tbsp granulated sugar

Ingredients for mixture 2: Vanilla and eggnog
250 g curd cheese
125 ml cream
2 egg yolks
5 cl caramel syrup
1 sheet leaf gelatine
1 tbsp sugar

Ingredients for the layers
150 g amaretti biscuits
2 cups strong espresso
½ l vanilla ice-cream

Ingredients for the meringue mixture
3 egg whites
60 g granulated sugar

Eggnog Surprise

with amaretti

  1. Mixture 1: Bring the milk to the boil, mix 2 tbsp milk with the custard powder and sugar. Add to the milk and bring to the boil, stirring constantly, until the mixture thickens. Leave the mixture to cool. Beat the butter until creamy and stir in the custard. Add the Spitz eggnog.

  2. Mixture 2: Mix the egg yolks and sugar together until fluffy. Fold in the curd cheese. Soak the gelatine in cold water. Dissolve in the heated caramel syrup and add to the curd cheese mixture. Fold in the whipped cream.

  3. Meringue mixture: Beat the egg whites until fluffy, gradually stir in the granulated sugar until the mixture is stiff.

  4. Soak the amaretti in strong espresso.

  5. To assemble the dessert:

         Add mixtures 1 and 2 in layers, interspersed with the amaretti
              Place in the fridge
              Top with vanilla ice-cream
              Cover with the meringue mixture
              Brown with a cook's blowtorch
              Decorate with the fruit

Use an icing bag to pipe in the meringue for a professional finish.
